Our fabulous Maya from Juju Spa and Organics brought this ancient grain to my attention. Like white quinoa,which is gluten free,as well as high in protein and calcium, the red is even more nourishing with a heartier flavor and texture.According to Rebecca Wood, author of "The Splendid Grain", the Incas sowed thousands of varieties of quinoa in multiples of yellows,reds,purples and black as well eye-catching mixed types!
